This cellulose based biofilm known as a SCOBY is like the roof of a house which protects the Kombucha batch when brewing. This bacteria cellulose is edible and perfectly safe, some people love to use SCOBY to make sushi, vegan jerky or flavoured gummies. When making homemade Kombucha you will need a Kombucha SCOBY to get some great tasting Kombucha.
